🍞 A White Bread That’s Light on Sugar, Not on Flavor
If you love soft, fluffy white bread but prefer a lighter touch on sugar, this recipe is for you. Our Low Sugar White Bread is made specifically for the Gemelli Artisan Bread Maker, delivering all the pillowy texture and buttery richness of a classic loaf — with just a fraction of the sugar.
Perfect for everyday use, this bread is kid-friendly, toast-approved, and sandwich-ready. The added dry milk gives it a subtle creaminess, while vital wheat gluten (optional) helps achieve a tall, springy loaf even with reduced sugar. And thanks to the built-in Low Sugar Setting (5), the Gemelli Bread Maker takes care of everything from kneading to baking — no monitoring needed.
Whether you're managing your sugar intake, baking for someone with dietary concerns, or just want a cleaner everyday loaf, this recipe proves that white bread can be both wholesome and delicious.

Recipe Note
🍯 Healthier Sugar Substitutes for Bread Baking
1. Honey
Substitute Amount: Use 1:1 (e.g., 1 Tbsp sugar = 1 Tbsp honey)
Notes: Adds mild sweetness and moisture. Slightly enhances browning. Reduce water in the recipe by 1 tsp per Tbsp of honey.
2. Maple Syrup
Substitute Amount: 1:1
Notes: Adds a gentle, earthy sweetness. Also adds moisture. Reduce water slightly (about 1 tsp per Tbsp used).
3. Agave Nectar
Substitute Amount: 1:1
Notes: Neutral flavor and dissolves easily. Reduce water by 1 tsp per Tbsp. Works well in low-temperature proofing cycles like Gemelli’s.
4. Coconut Sugar
Substitute Amount: 1:1
Notes: Less sweet than white sugar; adds a mild caramel flavor and slight brown color to the crumb. No liquid adjustment needed.
5. Date Sugar (ground dried dates)
Substitute Amount: Use about 2/3 the amount of sugar
Notes: Doesn’t melt, so it adds texture and color. Best used when you want a rustic, hearty feel.
6. Stevia or Monk Fruit (powdered blends)
Substitute Amount: Follow manufacturer instructions – typically much less than sugar
Notes: These don’t provide food for yeast, so combine with a small amount (½–1 tsp) of honey or sugar to help rise.
🔧 Pro Tip for Bread Machines (Like Gemelli):
Liquid sweeteners (like honey, maple, or agave) are the best direct swaps in bread makers because they integrate easily with the dough and help with crust browning. Just adjust liquid levels slightly to maintain the right hydration.
🍽️ Serving Suggestions
This low sugar white bread is soft, sliceable, and incredibly versatile. It’s perfect for:
Classic sandwiches like turkey, ham, or veggie
Toast with butter, nut butter, or jam
French toast (yes, even with low sugar!)
Kid-friendly grilled cheese or PB&J
Croutons for salads or soups
With less sugar, it pairs well with both sweet and savory toppings without overpowering the flavor.
🧊 Storage Tips
Room Temp: Wrap in parchment or store in a bread box for 3–4 days.
Freezing: Slice the loaf and freeze in a zip-top freezer bag for up to 3 months.
To Reheat: Toast frozen slices directly or defrost overnight in the fridge.
❗Avoid refrigeration — it can dry out the crumb quickly.
