INGREDIENTS
2 tbsp flat-leaf (Italian) parsley, very finely chopped
1 clove garlic, microplaned or very finely minced
Zest of 1 lemon
2 to 3 tbsp extra virgin olive oil
Pinch of kosher salt
INSTRUCTIONS
- Finely chop the parsley until very small and uniform.
- Add garlic and lemon zest and mix evenly.
- Stir in olive oil until lightly coated and glossy.
- Season with a pinch of salt.
- Let sit for 5 to 10 minutes before using to allow flavors to develop.
HOW TO USE
Cook steak using high heat until a crust forms.
Rest the steak for 5 to 10 minutes.
Slice against the grain.
Spoon gremolata lightly over the top just before serving.
Do not use this as a marinade. It is designed as a finishing element.
