INGREDIENTS
1/2 cup flat-leaf parsley, finely chopped
4 cloves garlic, very finely minced
2 tbsp red wine vinegar
1/3 cup olive oil
1 tsp dried oregano
1/2 tsp red pepper flakes
1 tsp kosher salt
1/2 tsp black pepper
INSTRUCTIONS
- Finely chop the parsley until small and uniform.
- Add garlic, oregano, red pepper flakes, salt, and black pepper and mix.
- Stir in red wine vinegar.
- Add olive oil and mix until combined but still loose.
- Let sit for 20 to 30 minutes before using to allow flavors to develop.
HOW TO USE
Cook steak using high heat until a crust forms.
Rest the steak for 5 to 10 minutes.
Slice against the grain.
Spoon chimichurri over the steak just before serving.
Do not use as a marinade.
